Ingredients
- 3 large ripe bananas, mashed
- 2 large eggs
- 1 ½ cups self-rising flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas until smooth (a few lumps are fine).
- Add the eggs to the mashed bananas and whisk until well combined.
- Gradually add the self-rising flour, folding it in gently with a spatula until no dry flour remains. Be careful not to overmix.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
- Use overripe bananas with brown spots for maximum sweetness and moisture.
- If you don’t have self-rising flour, substitute it with 1 ½ cups all-purpose flour, 2 ¼ teaspoons baking powder, and ¼ teaspoon salt.
