For the Frosting (Optional):

  • 4 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (to adjust consistency)

Instructions

  1. Prepare the Bananas and Wet Ingredients
    • Mash the ripe bananas in a large mixing bowl until smooth.
    • Add the melted butter, sugar, eggs, vanilla, and sour cream. Whisk until combined.
  2. Combine the Dry Ingredients
    • In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  3. Mix Wet and Dry Ingredients
    • Gradually fold the dry ingredients into the wet mixture. Mix gently until just combined. Avoid overmixing to keep the cake light and fluffy.
