Ingredients
For the Cake:
- 3 ripe bananas, mashed
- 2 cups all-purpose flour

- ½ cup unsalted butter, melted
- ¾ cup sugar (use brown sugar for more flavor)
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup sour cream or Greek yogurt
For the Frosting (Optional):
- 4 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon milk (to adjust consistency)
Instructions
- Prepare the Bananas and Wet Ingredients
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add the melted butter, sugar, eggs, vanilla, and sour cream. Whisk until combined.
- Combine the Dry Ingredients
- In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
- Mix Wet and Dry Ingredients
- Gradually fold the dry ingredients into the wet mixture. Mix gently until just combined. Avoid overmixing to keep the cake light and fluffy.
- Bake the Cake
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan and pour in the batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Frost (Optional)
- Let the cake cool completely before adding frosting.
- For the frosting, beat the cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Spread over the cooled cake.
