Ingredients
- 2 cups cooked chicken, shredded
- 1 pound potato gnocchi
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, garlic, carrot, and celery. Sauté for 3–4 minutes until soft and fragrant.
- Pour in the chicken broth and add the shredded chicken. Simmer for 5 minutes to blend the flavors.
- Add the gnocchi and cook until they float to the top, about 3–4 minutes.
- Reduce the heat to low and stir in the heavy cream, milk, Italian seasoning, salt, and black pepper. Cook for 2–3 minutes, ensuring it does not boil.
- Taste and adjust seasoning. If a thicker soup is desired, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in while simmering.
- Serve hot, garnished with parsley or Parmesan cheese if desired.

- For a dairy-free version, substitute heavy cream and milk with coconut milk or cashew cream.
- Add spinach or kale for extra nutrition.
