Ingredients
- 4 bone-in, skin-on chicken thighs (about 1 ½ pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Apple Glaze:
- 2 medium apples, peeled, cored, and sliced
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
Optional Add-Ins:
- 1 teaspoon fresh thyme or rosemary, chopped
- ½ teaspoon ground cinnamon
- 1 small onion, sliced
Instructions
- Preheat the Oven
Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan. - Prepare the Chicken
Pat the chicken thighs dry with a paper towel, then rub them with olive oil. Season with salt and black pepper, and arrange them in the prepared baking dish. - Roast the Apples
Toss the apple slices with a drizzle of olive oil and a pinch of salt. Arrange them around the chicken or on a separate tray. - Make the Glaze
While the chicken and apples roast, prepare the glaze. Combine roasted apples, apple cider vinegar, honey, Dijon mustard, and garlic in a small saucepan. Simmer for 5-7 minutes, mashing or blending the apples until the glaze thickens. - Glaze the Chicken
After the chicken has roasted for about 20 minutes, remove it from the oven and brush generously with the apple glaze. Return it to the oven and roast for an additional 15-20 minutes, or until the internal temperature reaches 165°F (74°C). - Serve and Garnish
Let the chicken rest for 5 minutes before serving. Garnish with fresh thyme or rosemary and serve with roasted vegetables, mashed potatoes, or a fresh salad.
Notes
- For best results, use bone-in, skin-on chicken to retain moisture and flavor.
- The glaze can be made ahead and stored in the fridge for up to 3 days. Reheat gently before using.
- Use Granny Smith apples for tartness or Honeycrisp apples for a sweeter glaze. A mix of both works beautifully!
- For a richer flavor, add a splash of apple cider to the glaze while simmering.
