Ingredients

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar

  • 2 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract

  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners. Mix graham cracker crumbs, sugar, and melted butter. Press into each liner and bake for 5 minutes. Let cool.

  2. Make the Cheesecake Batter: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing on low speed. Stir in sour cream and vanilla.

  3. Bake the Cupcakes: Divide batter over the crusts, filling each liner about ¾ full. Bake for 18-22 minutes until the centers are slightly jiggly. Let cool, then refrigerate for 2 hours.
